Is there a way to have it setup so you can have a list of latest posts that do not include an image? I want to use this to create a listing of available positions withing in our company using posts, but I don't want any images on the posts. I've tried the free versions but was curious if i could change this in the pro version.

Yes, if you dont want show image, please unchecking on Thumbnail at Display and Theme tab. For more details: https://www.joomunited.com/wordpress-demo/wp-latest-posts/default-custom-theme/

I've tried the free versions but was curious if i could change this in the pro version.

This feature is available in the Free version only, not the Pro one.
