1, Is this compatible with Joomshaper page builder pro?

Droppics is integrated with SP Page Builder.

2, Are the gallery images on mobile devices able to be swiped, rather than clicked?

You can swipe images in a few themes: Advanced Slideshow, Default,...
You can check on your mobile device our demo themes, navigate to burger menu to choose a theme:
