How do I simple customised my layout so that i can size the photo to what i need and layout the text so that it suits the style of my site?

Yes, you can set image size or customize code to suitable for your site. (see attached images)

I've got the text ticked under 'Display and theme' and the text isn't showing in the widget?
Also how do I customise the text so that it follows the text style of my site?

When I purchase the pro am I still able to get plugin updates after a year or do I need to pay $39 each year to have updates?

You still use our plugin when your subscription expires. You need to renew if you want to update.
