Is it possible that if a document can only be viewed by registered users, that it is still displayed in the listing but cannot be opened? A notice should then appear that you can only view the document as a member.

Yes, you can disable Download files and Preview files options at the User Roles settings, then users can see the file title only.
About the notice text, you should add it manually to your post/page.
